We know everyone has different tastes, but sometimes we wonder: “How could anyone not love the deliciousness that is the sweet potato?” If you’re not a fan of the sweet potato, that’s okay we still got love for ya. Either way, there are some pretty good reasons why you want to add a little more sweet potato to your diet.

Some Reasons To Love Sweet Potato

  • Sweet!
  • Very versatile.
  • High in antioxidants.
  • Great source of carbohydrates.
  • Rich in digestive fibre.
  • High in folate.
  • Low glycemic index.
  • Good source of vitamin C.
  • Excellent source of vitamin A.
  • Excellent source of potassium.

Those are just some of the reasons why the sweet potato is awesome. Heck, you can even potentially run your car off of giant sweet potatoes (via the ethanol; these giant sweet potatoes aren’t good for eating though). Also, in times of starvation you can survive on sweet potato (it’s a far more complete food than rice, for example, according to Dr. Ryan-Bohac).

And to be clear, we’ve got nothing against your regular potato, which is also delicious – in fact, the sweet potato and regular potato are pretty similar nutritionally. Having said that, potatoes belong, like tomatoes, to the nightshade family (which means they contain potentially inflammatory alkaloids, which can affect people who are sensitive to nightshades) – sweet potatoes belong to the morning glory family.

Now we’ve given some serious love to the sweet potato, let’s get on to some delicious, healthy recipes for you to get cooking. We’ve gathered these up from round the web for you, so enjoy (and full credit to the creative cooks who put these recipes together)!

Healthy Sweet Potato Recipe Round-up

1. Baked Sweet Potato Fries

If you love fries, but want to lay off the potato for a while, then try these out. They don’t crisp up as well as normal fries, but they’re still yummy! Tips from the comments: tossing the uncooked fries in egg whites and cooking them on parchment paper gets them much more crispy.

2. Baked Sweet Potato Chips

Healthy chips! And they look so beautiful too. The recipe uses coconut oil (which we love), and you bake them: so now you can snack on these instead of fatty, greasy, fried chips.

3. Healthy Rosemary Sweet Potato Wedges

Who can forget wedges? Treat yourself with these delicious little slices of sweet rosemary goodness.

4. Cinnamon Roasted Sweet Potato

Okay, how did these cinnamon wedges sneak in here?! They just looked so delicious we couldn’t help ourselves, we promise no more wedges! Tip: remember the salsa.

5. BBQ Chicken Burgers with Crispy Sweet Potato Fries

This is an amazing combo – BBQ chicken and sweet potato fries – delicious! You could swap out the fries for chips or wedges if you wanted – it’s all up to you.

6. Easy Sweet Potato Veggie Burgers With Avocado

Talking about burgers, this is one you’ve absolutely got to try. Okay, it’s a little decadent because of the maple syrup (you could experiment with leaving this out), but still… It’s got sweet potato, beans and avocado – that’s a lot of nutritional value – and it looks delicious!

7. Spicy Sweet Potato Burgers with Roasted Garlic Crema

One more burger, because there’s no way we could leave this out. From the picture it looks pretty decadent, but the secret is that it uses Greek yogurt (instead of say, sour cream…) Roast garlic, spicy jalapeno – this is one to try!

8. Autumn Sweet Potato Soup

We know what it’s called, but we think you could eat this healthy soup throughout the year – it’s easy to make, healthy and it’s got sweet potatoes! What’s not to love?

9. Healthy Sweet Potato Mash

What kind of sweet potato round up would this be if we didn’t include a mash? Well, here it is: a healthy sweet potato mash… is it even better than mashed potatoes? Maybe, maybe…

10. Sweet Potato Quinoa Cakes with Blackberry Salsa.

Quinoa and sweet potato, what a healthy combo! But with the blackberry salsa… that’s pretty special. Even though they’re small, they are super filling. And you can make up a batch of cakes, freeze ’em and then defrost and eat them when you want.

11. Roasted Sweet Potato, Quinoa and Arugula Salad

Sweet potato goes really well with quinoa. This is a delicious salad with a hint of cinnamon – great on its’ own or as a side dish.

12. Paleo-ish Sweet Potato Pizza With Fig and Prosciutto

This ain’t no ordinary pizza: what makes this guy really special is the healthy sweet potato base! And of course fig, goats cheese and prosciutto is a pretty awesome combination of ingredients, but it’s up to you as to the toppings you want to add – just remember the toppings are what will make or break this dish in terms of healthiness, so choose wisely!

13. Deliciously Healthy Sweet Potato Brownies

Is this even possible?! We haven’t tried these yet, they look delicious, but we’re also a little skeptical… Avocado and sweet potato? In a brownie?! We’ve got to give these a go!

Okay, that’s all for now! There are so many delicious sweet potato recipes that we couldn’t include them all (even though we wanted too). We’ll have to round up more in another post, but feel free to let us know your favorite sweet potato recipes in the comment section.
